Cabernet Sauvignon is grown at five of the familys estate vineyards each offering its own flavors and textures. Sara Fowler, PEJU's longtime winemaker, ferments each vineyard lot separately and ages in oak barrels for at least 18 months. Prior to bottling, she skillfully blends the lots so each enhances the other. The 2019 vintage exhibits well-defined yet elegant tannins that add length to the finish and ensure a long life in the cellar.
