Émile tends to his vines just as his grandfather, Georges, did for decades. Fruit from these multi- generational parcels is gently baldder pressed into stainless steel; malolactic conversion is discouraged and the resulting wine is then gravity bottled, followed by eight months "rest". Fresh and alive Sauvignon fruit shows upon first inspection. Minerality and white pêche de vigne, with apricot pit and crushed rocks, born of the rich provenance of its ancient seafloor terroir. This is a Sancerre that shows poise, and a refined fruit texture, with nerve and acidity.
