Shaya has a distinct character, at all, odds with the elegance, and which is characterized by the aromas of exotic fruits, with vegetable notes of grass clippings, broad and serious wine, with a noticeable freshness and a long dry aftertaste, where one can appreciate its minerality. This winery is a new project between the Gil family of Jumilla, Enrique Busto and Jorge Ordoñez. The winery and vineyards are located in the southeastern most reaches of the DO Rueda in the province of Segovia. The winemaker is Belinda Thomson from Crawford River Winery in Victoria, Australia, maker of some of the best whites down under.

International Wine Cellar(20% of this wine was aged for four months in large French oak casks): Green-tinged straw. Highly perfumed aromas of fresh citrus and orchard fruits, with complicating notes of anise and chalky minerals. Dense and powerful but light on its feet, offering vibrant lemon, pear and honeysuckle flavors and a touch of bitter herbs. Closes with a subtle smoky quality and superb persistence, leaving tangy citrus zest notes behind.
