The magic of the terroir, along with ancestral savoir-faire, results in a sublime golden yellow hue, enhanced by intense glints of coppery pink. The elegant effervescence of the finest bubbles is mellowed by a meticulous ageing process. Noble, pedigree expression, intensely sensual with the olfactory impact of great elegant winey complexity (malted cereals, floral aromas of acacia, broom and orange blossom). The resonance of a mineral setting highlighting the sparkling concentration of intense ripe fruit (roast coffee, toast, mild spices and blond tobacco). A full-bodied texture with hints of freshly candied citrus, ripened white- and yellow-fleshed fruits (chocolate-coated orange peel, dried apples and rhubarb) on a bed of many-layered flavours (quince paste, apricot and almond biscuits and beeswax). The wine is characterized by a bewitching yet expressive charm, in which its generosity carries the finish towards a deliciously mineral chalkiness.

A deeper golden hue, the 2007 Champagne Le Clos Saint Hillaire comes from a difficult year, but Billecart-Salmon made all their top wines in this vintage. Offering a good bit of power and elegance, the wine has ripe red fruit notes of raspberry liqueur, black cherries, crystalized ginger, caramel, orange peel, and very distinctive and intense mineral aromatics. Medium to full-bodied, it has fantastic energy and none of the greenness that can be found in 2007 sometimes. Long and persistent on the palate, with a peppery mousse and a lightly warming finish, it's a very successful wine in this difficult vintage. Drink 2024-2040.
