Opolo Vineyards has a long established reputation of growing and producing award winning wines in Paso Robles, California. With nearly 300 acres of vines on the east and west side of Paso Robles, Opolo Vineyards is privy to a wide range in climate, soil and growing potential—allowing more than 32 varietals to flourish. This variety combined with the passion behind the brand has made Opolo a favorite of wine enthusiasts everywhere. The grapes are sourced from our estate vineyards in Paso Robles. Cooling breezes from the nearby Pacific Ocean contribute foggy mornings and lower summer temperatures which produces exceptional, expressive fruit. Tryst is our Port style fortified wine created by following the finest traditions of Portugal. Fortification is accomplished by the addition of brandy, produced by Opolo’s own distillery, partway through fermentation to both stop fermentation and increase the alcohol level while preserving the wines natural sweetness. The wine is then aged in oak barrels with previous vintages blending with newer vintages as it ages in the Solera style for added complexity.
WINEMAKER NOTES: Complex aromas of tobacco and tea leaf with dark cherry and crushed blackberry dominate. Rich slinky tannins and a richly broad complex mouthfeel saturate the tongue. Dense and complex. A perfect wine to enjoy after dinner with either a flourless chocolate torte or perhaps a fine cigar.
